These delicious cod fritters can be found throughout the Caribbean and are great as a snack, a starter or as an accompaniment to a main meal...
Ingredients:
• 250g sustainably sourced cod or other white fish
• 500g plain flour
• 2 free range eggs
• Salt and black pepper
• 1 Scotch bonnet or other hot pepper
• Handful fresh thyme and parsley
• 2 - 3 cloves garlic (crushed)
• 6 - 8 spring onions (chopped)
• Water or milk
Directions:
1. Mix in the flour with enough water or milk to make a moist dough. Remove the skin and bones from the cod (if you are using salt cod then de-salt it first), then shred with a fork.
2. Mix the shredded fish and the eggs into the dough. Add salt and black pepper, crushed garlic, parsley, thyme, chopped spring onions, and a finely chopped piece of Scotch bonnet (how much you use depends on how spicy you like it!). Stir the mixture until the dough is smooth.
3. To cook, drop your doughy mixture by the spoonful into a pan of hot oil and fry. When cooked, remove from the oil, dab with a paper towel to remove any excess, and serve hot.
